Dave Plank is a Senior Research Fellow at the Department of Food Science and Nutrition at the University of Minnesota. Dave works with The Food Lawyers® on regulatory matters, analytical testing, litigation and product development. Dave’s publications and patents focus on dietary fiber, transfat replacement, sweeteners, acrylamide abatement, protein structure and protein quality. With over 35-years of laboratory research experience and 20-years of food manufacturing experience, Dave provides unique insights into the field of food science. Dave was a member of The Food Lawyers® team that successfully petitioned the U.S. Food and Drug Administration to revise federal law respecting the caloric contribution of allulose to food systems.
